Fructose is a naturally occurring sugar used as a clean, high-intensity sweetener. With a sweetness level 1.2 to 1.8 times that of sucrose, it enhances flavour perception and reduces sugar usage in food and beverage formulations. It is highly soluble, has low glycaemic impact, and contributes to better flavour balance and humectancy in dry mixes and baked products.
